Avocados are something I’ve found I really like since I started focusing on healthier food choices. I like avocado cubes on a salad or slices in a lettuce wrap. Avocados are full of healthy fat, which helps you feel full. When I’m really missing french fries, I break out this recipe. These “fries” are baked – not fried – for no added fat. This recipe is tasty, filling, and perfect for a snack or a side dish with a lean protein.
Baked Avocado Fries
Ingredients
- 2 large avocados, sliced
- 1/3 cup flour
- ½ packet powdered ranch mix
- ½ tsp salt
- 2 eggs, beaten
- 1 cup panko bread crumbs
- ½ lime, juiced
Directions
Preheat oven to 425 degrees. In 3 bowls, set up an assembly line. One with flour, salt and ranch powder mixed, one with beaten eggs, and one with bread crumbs.
One by one, placed avocado sliced into flour mixture, then into egg, then into bread crumbs. Place each piece on a wire rack over a baking sheet.
Bake for about 20 minutes or until golden brown. Squeeze lime juice over the fries just before serving, and serve warm. If you have leftovers to reheat another day, be sure to reheat them in the oven. Do not use the microwave – it will leave the avocado fries soggy!
This recipes makes 4 servings using the slices of half an avocado each with about 230 calories, 26g carbs, 14g fat, and 7g protein per serving.
