This dish is the lightest fix for Italian cravings that I’ve found yet! It is packed full of flavor and creates a filling main dish that can be served with a salad or vegetable side dish. I love that I can get the Italian flavor without all the carbs and gluten in a pasta dish! I’m sharing the recipe for a single serving, but it’s just as easy to make for a family of four.
Mozzarella Tomato Chicken
Ingredients
- 1 (4oz) raw chicken breast, boneless and skinless
- 1/4 tsp ground black pepper
- 1/2 tsp olive oil
- 6-8 fresh basil leaves, divided use
- 1 slice mozzarella cheese
- 1/4 cup diced tomatoes, fresh or canned
Directions
Season both sides of chicken breast evenly with pepper. Heat oil in nonstick skillet over medium heat. Add chicken and cook 4 minutes on each side or until no longer pink in the middle. Place 3-4 basil leaves on top of chicken. Top with mozzarella slice followed by diced tomatoes. Cover, reduce heat to medium-low, and cook for an additional 2 minutes or until cheese is melted. Serve topped with remaining fresh basil leaves.
This single serving recipe has 250 calories, 13g fat, 2g carbs, and 30g protein.
Serving Suggestions
I thought this was fantastic simply served on a bed of romaine with a drizzle of light Italian vinaigrette dressing. It would also pair well with baked broccoli, steamed mixed veggies with a sprinkle of garlic powder, or any other light side dish.
