Summertime to me means fresh fruits and vegetables. They taste SO much better in the summer! This is one of my favorite summer side dishes because I can use tomatoes and cucumbers straight from the garden (or the local farmers’ market). It’s perfect paired with a grilled chicken breast or a grilled pork chop!
Easy Tomato Cucumber & Onion Salad
Ingredients
- 2 medium red, ripe tomatoes
- 1 large cucumber
- 1 small onion
- 1/4 cup chopped cilantro
- 3 tbsp apple cider vinegar
- 2 tbsp extra virgin olive oil
- pinch of salt
- 1/2 tsp fresh ground black pepper
Directions
Peel cucumber, if desired. Cut tomatoes, cucumber and onion into bite size pieces and place in large bowl. Add remaining ingredients and toss to coat evenly. Cover and let sit in refrigerator at least 30 minutes prior to serving.
Recipe makes 4 servings with 88 calories, 7g fat, 5g carbs, and 1g protein per serving.
