Lunch on the go can be difficult, but this recipe is a great one to make ahead and take with you! It’s delicious and filling – perfect for a busy day!
Ingredients
- 1 cooked chicken breast, shredded (click this link learn how I cook chicken for shredding, opens in a new tab)
- 1/2 cup light sour cream
- 1/4 cup chunky salsa
- 1 avocado, cut into chunks
- 1 tbsp chopped fresh cilantro
- 1 tsp fresh lime juice
- 4 outer leaves of romaine lettuce
Directions
Combine all ingredients except lettuce in medium size bowl. Spoon mixture evenly onto romaine lettuce leaves. Roll up and enjoy!
