Light Potato Soup

 

 

There’s nothing better in the winter than a nice, hot bowl of soup! I thought potato soup was something that would have to become a rare treat as I watch my calories. Then I found this delightful recipe! It’s under 300 calories per bowl, fixes my potato soup cravings, and tastes delicious! HINT: Double this recipe to guarantee leftovers!

Light Potato Soup

Ingredients

  • 1 tbsp butter
  • 1 cup chopped onion
  • 2.5 tbsp all-purpose flour
  • 3 cups chopped red potato
  • 1.25 cups 1% milk
  • 3/4 cup fat free, reduced sodium chicken broth
  • 1/2 cup water
  • 1/2 cup shredded reduced-fat sharp cheddar cheese
  • 1/8 tsp ground red pepper (more to taste, if desired)
  • 1/2 tsp salt (if desired)
  • 2 tbsp chopped green onions

Directions

Melt butter in a medium saucepan over medium-high heat. Add onion to pan and sauté about 5 minutes until onion is soft. Sprinkle with flour. Cook 1 minute, stirring constantly. Add potato, milk, broth, and water. Bring to a boil. Cover, reduce heat, and simmer 15 minutes. Add the shredded cheese, salt and ground red pepper. Cook an additional 2 minutes or until cheese melts, stirring often. Top each serving with chopped green onions.

Recipe makes 4 servings with 288 calories, 7g fat, 46g carbs, and 11g protein per serving.
